- 1 medium spaghetti squash
- 2 cups shredded cheese (cheddar or Gruyère)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- Once cooked, scrape the flesh of the squash with a fork to create spaghetti-like strands.
- In a large mixing bowl, combine the spaghetti squash strands, heavy cream, garlic, salt, pepper, nutmeg, and half of the shredded cheese.
- Transfer the mixture to a greased baking dish and top with the remaining cheese and Parmesan.
- Bake for 25-30 minutes until the top is golden and bubbly.
- Garnish with fresh parsley before serving.
