A delicious and easy-to-make no-bake cheesecake featuring the rich flavors of Lotus Biscoff cookies.

- 250g Lotus Biscoff cookies
- 100g unsalted butter, melted
- 400g cream cheese, softened
- 100g powdered sugar
- 200ml heavy cream
- 1 tsp vanilla extract
- Extra Biscoff cookies for topping
Instructions
- Crush the Lotus Biscoff cookies into fine crumbs.
- Mix the cookie crumbs with melted butter until well combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a bowl, beat the cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Pour the cheesecake filling over the crust and smooth the top.
- Chill in the refrigerator for at least 4 hours or until set.
- Before serving, top with extra Biscoff cookies.
Notes
- For a stronger Biscoff flavor, add more crushed cookies to the filling.
- Make sure the cream cheese is at room temperature for easier mixing.
- This cheesecake can be made a day in advance for convenience.
