Description

A delightful Hawaiian poke cake that is perfect for luau parties, featuring a moist cake soaked in tropical flavors.

Ingredients

Scale
  • 1 box yellow cake mix
  • 1 cup coconut milk
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1 cup whipped topping
  • 1/2 cup macadamia nuts, chopped
  • 1/4 cup maraschino cherries, for garnish

Instructions

  1. Preheat the oven according to the cake mix instructions.
  2. Prepare the yellow cake mix as directed on the box, substituting coconut milk for water.
  3. Bake the cake in a 9×13 inch pan until a toothpick comes out clean.
  4. Once baked, let the cake cool for 10 minutes, then poke holes all over the top using a fork.
  5. Pour the crushed pineapple over the cake, allowing it to soak into the holes.
  6. Spread the whipped topping over the cake evenly.
  7. Sprinkle shredded coconut and chopped macadamia nuts on top.
  8. Garnish with maraschino cherries before serving.

Notes

  • For a richer flavor, use full-fat coconut milk.
  • Let the cake chill in the refrigerator for a few hours before serving for best results.
  • Feel free to add more tropical fruits as toppings.
