- 4 large russet potatoes
- 1 cup shredded cheddar cheese

Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cut the potatoes into fries.
- Soak the fries in cold water for at least 30 minutes, then drain and pat dry.
- Heat oil in a deep fryer or large pot and fry the potatoes until golden brown and crispy.
- Remove fries from oil and place on a paper towel to drain excess oil.

- Remove from the oven and top with sour cream and green onions.
- Season with salt and pepper to taste, then serve immediately.
