Description

Chicken Bell Pepper Ranch Burritos are a delicious and satisfying meal, combining tender chicken, colorful bell peppers, and a creamy ranch dressing wrapped in a soft tortilla.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, diced (red, green, yellow)
  • 1/2 cup ranch dressing
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup black beans, drained and rinsed (optional)
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. In a large bowl, combine the shredded chicken, diced bell peppers, ranch dressing, and black beans (if using).
  2. Mix until all ingredients are well coated with the ranch dressing.
  3. Lay out the flour tortillas on a flat surface.
  4. Divide the chicken mixture evenly among the tortillas.
  5. Sprinkle shredded cheese on top of the chicken mixture.
  6. Fold in the sides of the tortilla and roll it up tightly from the bottom.
  7. Repeat with the remaining tortillas and filling.
  8. Heat a skillet over medium heat and place the burritos seam-side down in the skillet.
  9. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  10. Remove from the skillet and garnish with chopped green onions before serving.
