- 2 cups cooked chicken, shredded
- 1 cup bell peppers, diced (red, green, yellow)
- 1/2 cup ranch dressing
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup black beans, drained and rinsed (optional)
- 1/4 cup green onions, chopped (for garnish)
Instructions
- In a large bowl, combine the shredded chicken, diced bell peppers, ranch dressing, and black beans (if using).
- Mix until all ingredients are well coated with the ranch dressing.
- Lay out the flour tortillas on a flat surface.
- Divide the chicken mixture evenly among the tortillas.
- Sprinkle shredded cheese on top of the chicken mixture.
- Fold in the sides of the tortilla and roll it up tightly from the bottom.
- Repeat with the remaining tortillas and filling.
- Heat a skillet over medium heat and place the burritos seam-side down in the skillet.
- Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet and garnish with chopped green onions before serving.
Notes
- Feel free to customize the filling with your favorite vegetables or spices.
- These burritos can be made ahead of time and stored in the refrigerator for up to 2 days.
