Description
A delicious and unique grilled cheese sandwich featuring BBQ chicken and sweet pineapple.
Ingredients

- 2 slices of bread
- 1 cup cooked BBQ chicken, shredded
- 1/2 cup pineapple chunks
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon butter
Instructions
- Preheat a skillet over medium heat.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer BBQ chicken, pineapple chunks, and shredded cheese.
- Top with the second slice of bread, buttered side up.
- Cook for 3-4 minutes until golden brown, then flip and cook the other side until the cheese is melted.
- Remove from skillet, slice, and serve warm.
Notes
- For extra flavor, add jalapeños or red onion.
- Use gluten-free bread for a gluten-free option.
- Can substitute chicken with pulled pork for a different twist.
